Did you know you can increase the lycopene and beta-carotene content of watermelon by storing it at room temperature for a day or two? Neither did us! But according to what I have read, some healthy eating do's are not so obvious. Here are a few more secrets of healthy eaters:
- Release more lycopene in your tomatoes by baking them.
- Reduce the production of cell-damaging AGEs (advanced glycation end products) by slow cooking meat as opposed to grilling or cooking it at high temperatures.
- Activate more of the heart-protection compounds in garlic by crushing the cloves and letting them stand in a bowl for about 30 minutes.
- Increase the cancer-fighting compounds in broccoli by steaming it.
