Kinilaw na Tuna (Ceviche Tuna)

I’ve been craving this kind of food since I never had this for almost over a year staying here in United States. I remembered when I was in Philippines, my mother used to make kinilaw na bolinaw(ceviche anchovies) for lunch or dinner and she made it so good!!! By the way, that’s the thing why I’m craving of kinilaw and missed the taste of it.
When I went shopping in grocery store and passing by in seafood aisle, something catches my attention, the ahi tuna steak. It is looks fresh coz of its redness and the price is not bad too. I thought also of making kinilaw for dinner and kinilaw na tuna is good. So I grab 4 steaks and put in the cart.
Making kinilaw na tuna is very easy. You just need the following: of course tuna fillets cut into cubes, vinegar(coconut wine is good), lemons, scallions, red onion, ginger, cucumber, red pepper and tomato is optional, salt and a little bit of monosodium glutamate.
How to make? First is soaking the tuna in vinegar solution and put some of the lemon juice. Then add ginger, onions, scallions, cucumber - by slicing or chopping.
Combine and mix all ingredients. Pour some salt and monosodium glutamate for better taste. Serve immediately. It’s really good especially when you put chili to make it spicy. For me, I just put some chops of jalapeno... delicious!

Black Friday

I just heard from a friend that there's a huge sale in every stores the next day after thanksgiving and guest what, all stores will open around 5 in the morning...that's too early! You need to be there in line together with bunch of people...whew! That’s crazy; it's just like the saying says "the early bird catch the worm". Meaning, if you early there and be the first on line you can get the stuff that on sale. Why you hassle you on waking up early and hurry in going to store? Thanks God there's Black Friday website. A Black Friday is a site helped show people that they can save money when shopping for Christmas by buying items during Black Friday, which is the day after Thanksgiving. This site let people purchase Black Friday items online without the hassle of having to stand in line at the store at 5am. They also offer email alerts that let you know when new black Friday ads have been posted. They tried to make it a consumer friendly site that was useful for planning your holiday shopping last year.

Scary Thursday!

It’s all about our microwave!!!
I was in the kitchen cooking some dinner food when the fan goes on by itself. I didn’t turn it on, it’s really weird. So, I called my husband and asked him to check it out what’s going on. When he tries to turn-off the fan, it doesn’t goes off. He opens the microwave and something smell burn came out. I’m scared when I smell it, I thought it will explode and make our house goes on fire. So, my husband ran onto the garage and turn off the circuit breaker switch. Thanks God, nothing happened. Maybe just need to replace the microwave into new one!

Got a Phone!!

It’s been over one year living here in United States without having own cellular phone. Unlike when I was in Philippines, phone is not a problem. You can buy cheaper phones there as long you can text and call. The only problem is loading the phone, but at least there is pasaload or you can buy also e-lod that is also cheap. But when I got here in US, I just used my husband phone to call my parents and family in Philippines. It’s hard because I can’t used his phone whatever or whenever I like coz that his business phone. Last week, my husband planned to upgrade his phone, so I go with him. When we got there, one of their display phone catch my attention. It’s really nice and I like it. My husband asks me if I want to open an account for phone. Of course, I would like to. So, I open an account and it’s not bad I just pay $200 dollars. Next is the monthly bill, its ok…the good thing is “I got a phone!”

Crisis Sucks!

Gas prices goes high, food prices go high...what's next?
Lots of bills to pay: electric bills, water bills, phone bills, credit cards bills and the worse is the house bills. The income of my husband per month on his business job is not enough to pay all the bills. Even my paycheck goes to paid on bills but same thing not enough too! How much hard work you do, not enough! It’s really hard especially now gas goes on high. Affect of this of course all the basic things we need will goes on high, especially the prices of food we eat.

It Sucks!

Maybe you ask why I said “it sucks!” Why? Here’s the story.

Last Wednesday, I have worked and it was schedule 2pm till 10:30 at night. That means I can’t watch the announcement who’s going to be the winner in the American idol finale. Whose David will take home the title? In my mind, I thought that David Archuleta will win based on what the judges say last Tuesday night regarding on their performance. Simon said to David it is “knockout” which means that he defeated David Cook. So, I went to work and thinking that “David Cook” my idol will not win on the competition. The time runs quick, my husband pick me up in work. When I was on the car I asked him who won in American idol. Did David Archuleta grab the title? He looks at me and said “I’m sorry sweety I did not record the show”. I said to him its ok coz it’s not David Cook won. My husband said that David Cook was the American Idol. When he says that, I have smile on my face…I’m so happy but its sucks coz I didn’t watch the night David Cook win. For those people who voted David Cook for American idol…thanks a lot!

Time Management

Sometimes I don't have enough time to sit on my computer and take some opportunities on my PPP. Every time I sat down on my computer chair, my baby will scream and cry. This makes my husband mad at me. Well, my time is just wasn't enough for me. Just like time runs so fast everyday. Whew! It’s so exciting! American idol showdown tonight and this is the night I’ve waited. Who is going to be the next American Idol? Who’s your bet: David Archuleta or David Cook? Whose David will take home the title this Wednesday night? Ummm…For me, I want David Cook to win. I really like the way he sang, his voice, his performance, his rocking roll….whew! Marinated Salmon

This is a quick-prep dish; mix the marinade first and add the fish, and by the time you fire up the broiler the salmon will be ready to cook. If you place the salmon pieces under the flame with their skin side down, you don't even have to flip them ‑- and they'll be ready in no time. Rice and boiled vegetables go particularly well with this dish.

You just need the following:

3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon hoisin sauce
1 teaspoon chili-garlic sauce (or 1 clove minced garlic and a large pinch of red pepper flakes)
1 teaspoon sugar
1 tablespoon minced ginger (about a 1-inch piece)
1 1/2 teaspoons sesame seeds, white or black or a combination
1 1/4 pounds salmon filet, with skin, cut into 8 pieces
Vegetable oil

How to cook?

1. Combine all ingredients except salmon and vegetable oil in a bowl and mix well. Place salmon pieces in a large resealable plastic bag or glass mixing bowl and pour marinade over fish to cover. Be sure all pieces are coated.
2. Preheat broiler. While it's heating, remove broiler pan and brush the surface with a small amount of vegetable oil to prevent fish from sticking. When broiler is ready, remove salmon from marinade, reserving marinade for basting, and arrange salmon on broiler pan.
3. Place pan on the middle rack of the broiler, about 4 inches from the flame. Broil fish for 3 minutes. Pull rack out, baste fish with reserved marinade and put back under. Broil 2-4 more minutes, or until top of fish begins to brown and fish is slightly firm, not wobbly, when pressed with a finger. (You really want a bit of color on the fish, especially around the edges, so if it's not browning, try raising the rack to its highest point for the last minute of cooking. Just be sure to watch the fish carefully so it doesn't burn!)
4. Serve with rice and vegetable.


Yum…yum…yum…its really good!
Note, in warm weather especially now, grilling is best for this recipe.

I Sign Up for PPP!

I have more days off from work. Most of my days off will just go waste because I have nothing to do. I’ve heard about earning money while blogging from my friends in the blogging world. They invited me to apply my blog to payperpost and I did try it. And I’ve learned to stretch my patient upon the submission of my application to PPP. I keep on trying my very best to reach their requirements. I submitted my blog last night and they responded me so quick. And this morning they surprised me in my email. The message was telling me that my blog has been approved. Fortunately, I am so happy that they accepted me and now I can earn extra money. Just what my friend said it was fun. And now I can start taking opportunities too. I am so excited and I am going to use the money to treat my husband for a good dinner sometimes. And extra money will go to my savings account. I would love to blog with money. And I would like to extend my thanks and gratitude to my co-bloggers and my friends who invited me to join PPP and thank you payperpost for accepting my blog. So far, I felt like I am one of those lucky PPP postie.



Hard working or working hard?

I was so tired from my work today. I felt like a rotten vegetable everytime I came home. After working at the store, I have to work at home again to take care of my princess little girl. None stop working at all! So I considered myself as a hardworking mother. Working there and working here. That means I'm working hard too!

Craving for Mango

Whew! Yes, I’m craving of mango…not mango that we can see in different stores here – the reddish green mango. I mean, I’m craving the Philippine mango…the golden yellow in color…that’s what I’m looking of. My hubby and I try to look at Asian market here but we can’t find it. We went in different stores here like Winco, Safeway, Sherms and Albertson but same thing happen we can’t find it…huhuhu. One of my Filipina friend here told me that last time she bought a mango in CostCo that same as our Philippine mango but it is produce from Mexico not in Philippines…whew! It’s great, my hubby went there and finally bought some mangoes…yepey!!!

From mango I made this wonderful dessert of mine – mango float. Mango doesn’t float…but when you taste it, sure you will be float for its yummy…hehehe
You just need the following: of course slice ripe mango, cool whip and graham crackers. It’s easy to make. In a square or a rectangular glass dish, layer approximately two of graham crackers, followed by mango slices and then cool whip. Repeat until all are layered. Chill before serving. My hubby loves it!
