Sweet Tart, Anyone?

This spring, you may be lucky enough to see a seasonal favorite pop up in your local grocery or farmer's market—rhubarb. If so, grab it!

Tangy and tart at the same time, rhubarb mixes beautifully baked with strawberries and other sweet fruits. Better yet, it has a mere 11 calories per stalk.

Skip the traditional strawberry rhubarb pie (and all those fat and calories in the crust) and simply bake the rhubarb and strawberries, tossed with a little Splenda or other artificial sweetener to taste, in a 350 degree oven for 30 minutes or until tender. After it comes out of the oven, sprinkle a little low-fat granola on top to add some crunch. Or add a dollop of low fat vanilla yogurt. Or both! Either way, your taste buds are in for a treat!
